Recipe for January
Grilled Chicken, Fig and Rocket Salad.

Ingredients
4 chicken breasts
juice of 1 lemon
1 tbsp brown sugar
1 tbsp dark soy
fresh ice-berg lettuce
fresh rocket
4 figs - quartered
pine-nuts toasted
a few anchovies
4 small onions - peeled and halved
3-4 small day old bread rolls
Verlaque Chili Oil
salt/pepper
Slice the chicken breasts in thinner strips. In a plastic bag, mix the lemon juice, sugar and soy. Add all the chicken pieces and allow to marinade for at least 30 minutes. Heat up your griddle pan and grill the chicken pieces very quickly on both sides. while doing that, you can add the onions and grill them too. Season with salt and pepper and keep aside. Slice the bread rolls in thin slices and drizzle with Verlaque Chili Oil. Roast in a hot oven until golden and crispy. To assemble the salad, lay the lettuce and rocket in the bottom of a beautiful salad platter and start building your salad with the various ingredients. Finish off with the toasted pine nuts.
Dressing
1 cup mayonnaise
1 tbsp lemon juice
1 tbsp Worcestershire sauce
1 clove garlic - minced
salt/pepper
½ cup Parmesan cheese
a little milk to thin the sauce
Mix all the ingredients together with a whisk and drizzle lavishly over the salad just before serving.

“FLIGHT FOR BIRDERS”
BIRD IDENTIFICATION & CONSERVATION COURSE
Piketberg
2nd and 3rd February 2012

“Flight for Birders” was developed to assist novices and experienced bird-watchers to become involved in bird-watching in a practical and sustainable way. Basic steps in the identification of birds will be highlighted and the identification of garden birds, water birds, birds of prey and more difficult species such as swallows, waders and “little brown jobs” will be discussed systematically.

The course is illustrated with more than 1,600 slides and drawings. Emphasis will be placed on the development of “Site Support Groups” for Important Bird Areas for the central West Coast region of the Western Cape. Important conservation issues will be discussed and details will be given on how ordinary birders could become involved in conservation actions. A practical outing will be included, manuals will be distributed and certificates endorsed by BirdLife South Africa will be awarded.

THE SWARTLAND SPCA IN CRISIS

Friday, 6 January, was a sad day for us, we had to say goodbye to our kennel hand Nathan Daniels. The Swartland SPCA is unfortunately facing some severe financial challenges this year and as a result a decision was made to retrench Nathan.
Nathan was responsible for walking all the dogs every day and for responding to calls about strays or animals in need. Last month alone he admitted 71 animals to our SPCA. Nathan also assisted the kennel supervisor in the assessment procedure of dogs up for adoption and did all the fetching and carrying of animals of the underprivileged when they were brought in for sterilisation. Not to mention the fetching and carrying required to keep the kennels operational.
Our expenses are R70 000 a month and we are eating into our reserves at a rate of R20 000 a month. If we could find 20 companies willing to sponsor R1000 a month we can keep operational.
If there are companies in the Darling area who are in the budgeting process and could find it in their hearts to include the SPCA as part of their social responsibility we would be most grateful. I am very happy to meet with anybody to present our financials, budget and 2012 business plan.
