Recipe of the Month


It’s a season to be jolly
We are slap-bang in the middle of summer and last plans and purchases are made for the jolly season ahead. Caravans are packed, tickets are booked and for those who stay at home, linen and carpets are cleaned for the drones of family members that will arrive shortly for their annual holiday with the family.
It has been a year filled with ups and downs, for me more ups than downs, but my thoughts go out to all who will have to celebrate this season alone for whatever reason. Maybe you have to deal with the loss of a loved one, maybe the loss of a child to drugs or alcohol or maybe you have to deal with the loss of a marriage that is no more. There is good news! Whatever you are going through, WILL pass. Nothing ever stays the same, so whether it is good or bad, it will change. My wish for all of you, is that it all changes for the good and that you will find peace within yourself.
If however you are blessed to have all your family around you this season, go on, set that extra place at your table and invite someone who is lonely, it will change YOUR life.
Remember: The change I want to see, let it begin with me!
My family and I will all be together for the holiday at our house in Hermanus and for that I am truly grateful. There are few things as heartwarming as sharing delicious food with friends and family. When on holiday, we all take turns in the kitchen. The important thing is to keep it simple, yet delicious. I hope you will find some recipes here to help you make this holiday just a little easier and effortless.





South African Seafood Potjiekos
feeds about 12 hungry souls

Ingredients

For the tomato base


                                              3 cans chopped tomatoes
                                              1 small can tomato paste
                                              2 large onions - chopped
                                              2-3 cloves garlic - chopped
                                              3 tbsp vegetable oil

                                              2 tsp fry ground fennel
                                              2 heaped tsp smoked paprika
                                              2 tsp turmeric
                                              1 tsp dry ginger
                                              1 tsp cinnamon
                                              3 bay leaves
                                              1 tbsp dry oregano 


                                               about 1 liter chicken stock
                                               juice and zest of two lemons
                                               2 tbsp sugar

Fresh fish


                            400gr yellow tail - green on SASSI
list

                            800gr hake - green on SASSI list
                            2 kg mussels - green on SASSI list

                            1 medium crab
                            2 kg prawns - orange on SASSI list

Start to get your fire going with charcoal and when you have a few coals, place your pot over the fire and when the pot is hot, add the oil, onion, garlic and all the spices. Stir with a wooden spoon until your onions are soft lightly caramelized. Add the all the other sauce ingredients and bring to a light simmer. Place the lid of the pot back on and relax while the sauce is cooking. Feed your fire with thin wood so that the sauce just bubbles. When the sauce is thick and wants to start catching at the bottom, add more hot water and keep reducing the sauce. Remember the longer it cooks, the better it gets.Taste the sauce and adjust seasoning to your taste.
When you are happy, I was after about 1 hour, add the seafood and some salt and place the lid back on. Once all the mussels are open (discard the ones that don't), the prawns are cooked, the legs of the crab comes off easily when pulled and the fish is flaking, your pot is ready.

Place the pot on the table with heaps of crusty bread and a lemon aioli. Enjoy!

“FLIGHT FOR BIRDERS”


BIRD IDENTIFICATION & CONSERVATION COURSE

2nd  and 3rd February 2012

 

 


“Flight for Birders” was developed to assist novices and experienced bird-watchers to become involved in bird-watching in a practical and sustainable way. Basic steps in the identification of birds will be highlighted and the identification of garden birds, water birds, birds of prey and more difficult species such as swallows, waders and “little brown jobs” will be discussed systematically.


 

 

The course is illustrated with more than 1,600 slides and drawings. Emphasis will be placed on the development of “Site Support Groups” for Important Bird Areas for the central West Coast region of the Western Cape. Important conservation issues will be discussed and details will be given on how ordinary birders could become involved in conservation actions. A practical outing will be included, manuals will be distributed and certificates endorsed by BirdLife South Africa will be awarded.

Porterville is peaceful hamlet on the slopes of the Olifants River Mountains. Situated 140km north of Cape Town and 26km from the N7 highway, Porterville offers country hospitality, diversity and authenticity. It was established in 1863 after Frederick John Owen subdivided his farm Pomona into plots. The town was then named after the Attorney General of the Cape, William Porter.

The town itself is untouched in its simplicity with houses dating back to the 1800's.

Cornberg Cottages and Café has new owners

 

 

A new chapter in our lives commenced when we got married on October 15th 2011 and signed a purchase agreement for Cornberg Cottages and Café in November 2011.


We are excited to announce that December 1st 2011 will see us taking over ownership and management of Cornberg Cottages and Café in Koringberg!
Wesley is a qualified viticulturist and has extensive knowledge and experience in the wine industry, from the growing of the grapes to the winemaking process to the consumption of the product.
Elzaan is a qualified livestock manager, but found her way to a top class guest house and restaurant in Franschhoek in 2009, where she played the part of bookings manager.
The Lord’s ways are mysterious, but at times like these we can only be grateful at His insight and wisdom in our lives. How appropriate it is that we now will have the opportunity to run our own guest house and restaurant in the heart of the Swartland, with country folk and farmers as our friends and customers. We are even planning on growing our own organic vegetables for use in the restaurant!


Our main objective is to run a retreat where one and all can sit back and relax, while enjoying hearty food and wine. Even if you only want to stop by to take a look at the new owners, you are more than welcome!
We look forward to many fond memories spent at the Cornberg Cottages and Café!!

A MASSIVE thank you from the Nosy Rosy team on the West Coast to Matrix in Gauteng.

 

We both have family who live up in Gauteng, Nicky’s mom lives in a retirement village, Montgomery Haven. Nicky speaks to Marie on a daily bases to catch up on the activities of the day, the conversation is normally filled with everyday normalcy. Had tea with Lola, went down to Cresta, Carol came round, Angelique took me to the doctor (Marie is recovering from a stroke). Saturday nights call was not the normal one. Marie had been to a Xmas lunch and Bingo afternoon in the Haven. Normally this would have been nothing unusual as this is after all the season to be jolly. Marie spent an hour on the phone explaining to us that this was not hosted by the Haven but by an outside company who instead of splurging out on a Xmas party for their staff, they took the party to the residence of the Haven. The team of Matrix sat amongst the residence and shared the afternoon with them. Marie said the food was fantastic the people were incredible there were gifts for all. Bingo after lunch and laughter the order of the day.

A Christmas Party with a Difference

Every year Matrix Marketing has a staff Christmas party which usually takes the form of a luncheon at a restaurant with speeches and thank yous’.

So, this year taking the economy into consideration, we decided to look closely at our social conscience, and came to the conclusion, although very pleasant, the restaurant party lacked substance. With this in mind, the staff at Matrix were asked to consider alternatives, which would talk to our social conscience and expose our staff to other aspects of life.

One of the many suggestions, from the staff, was to have lunch with some of our senior citizens and the Montgomery Haven was selected for its proximity to our company. Tables in the hall were decorated with tinsel and Christmas hats. All the catering was taken care of by Matrix Marketing, as was an afternoon of activities, which included a luncheon for the pensioners served by our staff, (whose average age is under 30), followed by Christmas carols, lead by one of Matrix’s own Divas, then 7 rounds of competitive bingo with a prize for each round comprising of towel sets and cushioned lap trays. Christmas gifts were handed out to every resident that attended.

What took us totally by surprise was the gratification communicated in numerous thank you notes after the occasion. What amazed us was how some of the residents have no family whatsoever and no one to share the festive season with, needless to say being a sales orientated company, many of our young male staff took great pleasure in giving the lady residents a hug and wishing them a happy and memorable Christmas.

The numerous letters of thanks we received from the residents subsequent to the function left us in little doubt of the success of the afternoon.

The Cancer Association of South Africa (CANSA)

Men – Look After your Most Important Tools


As part of their Men’s Health campaign, the Cancer Association of South Africa (CANSA) encourages all men to take charge and take action when it comes to their own health. “We encourage all men to get in the habit of doing regular self-examinations, getting screened as well as adopting a healthy and balanced lifestyle in order to keep their most important tools safe,” says CANSA’s CEO, Sue Janse Van Rensburg.

 

Testicular cancer is the most common cancer in young men between the ages of 15 and 39.

Prostate cancer affects older men from age 50 onward and is the leading male cancer in South Africa with one in 24 males developing prostate cancer.



Janse Van Rensburg adds “Let’s face it, some men are known to be more indifferent towards their health, especially when compared to the efforts of women. Many men don’t get regular health checks for fear it will lead to a hospital visit, they are embarrassed to discuss their health issues or they find it too hard to see a doctor because they just can’t fit it into their schedule.”
CANSA’s Men’s Health campaign aims to create awareness and educate men about the warning signs as well as the importance of early detection of prostate and testicular cancer to enable more effective treatment and a better chance of recovery. This is achieved by CANSA’s cancer screening clinics. During the last year, CANSA recorded over 5 600 Prostate Specific Antigen (PSA) tests to help detect prostate cancer.

CANSA’s P-Ball game (an awareness device) involves a small biodegradable ball that is placed in a urinal. The aim is to destroy the P-Ball, using a full bladder and in the shortest possible time to gauge the strength of the urine stream. A weak urine stream may be a warning sign of prostate cancer and men experiencing it should consult their doctor.

In 2010, the P-Ball game alerted 12 men participating in the Sanlam Cancer Challenge regarding possible early signs of prostate cancer and they received medical consultation.

The P-Ball game is available at R20, and can be ordered from one of CANSA’s Care Centres country-wide.

The Children’s Hospital Trust fundraises for critical upgrades and equipping of the Red Cross War Memorial Children’s Hospital and paediatric healthcare projects in the Western Cape. Such projects include the recent upgrade of the Hospital’s 56 year old Burns Unit, which now has modernised facilities that are on a par with the ICU level of critical care and international standards. 100% of all funds donated to the Children’s Hospital Trust go directly towards specified projects and not a single cent is spent on administration costs.

The functions and objectives of the Darling Music for All / Darling Musiek vir Almal (DMA) initiative is to uplift, support, educate and develop under privileged youth of the community at large through music; by making available to them musical instruments, music tutoring and their on-going advancement in the field of music, with the goal of developing a youth orchestra and youth choir.

Our initiative follows similar principles as the most successful El Sistema initiative in Venezuela.

The DMA was officially formed in February 2011 as a NPO, with an executive committee,
four of whom double-up as tutors. All activities and achievements are currently being run by the committee members.
Student lessons are being hosted in the Early Childhood Development Centre, which is part of the Darling Trust, as well as private homes. This includes the tutoring of music theory.
Learners will develop to become future tutors, thus enabling the project to become sustainable.

Our current student base consists of six violinists, five guitarists, piano, recorder and five drummer / percussionist students.

The DMA, where possible, is collaborating with other music organisations / schools / universities and NGO's. This will result in mutually beneficial relationships in the field of music tuition. eg: The Darling Trust.

Our goal is to form a mini orchestra and be part of the Darling Music Experience in February 2012. Musicians will be a combination of students and their tutors.

The DMA require instruments of any type which could be donated for the tutoring of students. Alternatively, the instrument could be purchased at a negotiable small fee.

Instruments required at this stage are a piano, keyboard, guitars, recorders, junior and senior violins, drum kit and percussion, flute, clarinet, trumpet, trombones, viola and cello.

We also require piano, violin, flute and youth choir teachers / tutors.

German professional musician Johannes BECKMANN assisted the students with violin tuition and music theory, during his stay in Darling.

  

 


Larry Joe Workshop - November '11.

Ex-convict, Larry Joe told an enthusiastic audience of children about his life of stealing, until he was eventually jailed. While in prison, he continued to improve his singing and guitar playing and after a reduced prison sentence, now performs before appreciative audiences. This performance was filmed by the SABC and will be screened on a Sunday at 12h30, early in December on SABC1. Larry will also be making an appearance in the near future on '7de Laan' and 'Noot vir Noot' early next year. He has plans to perform overseas.
