What you can do about BPA:

Perfect Pies




For me, there is something so warm and comforting about presenting a pie to my family or guests. Being on the receiving end of a pie, whether it is sweet or savory, is as pleasing.

It says: “ I care about you and that is why I made a pie for you!”


I love the fact that a pie is like an unopened present, you never know what is lurking underneath the crust and if you break open the crust the heavenly aromas of a beef or apple pie is almost intoxicating. Sadly though, many people are threatened by the idea of making a pie from scratch and they shouldn’t be. After all it is as easy as pie! I have a few tricks up my sleeve that will help you conquer this fear….


First off is my no-fail pastry recipe, that is if you insist on making your own. Trust me, it could not be easier. Try it. You do however have to make it in advance, but it freezes extremely well. So roll up your sleeves and make a double batch for the days when time is not on your side.


For the moms/cooks who are always looking for the easiest way out, buying puff pastry is absolutely ok with me. If you make a aromatic and flavorsome filling no-one is going to blame you if the pie crust is not 100% homemade. Try and buy puff pastry that is made with butter though, it does make a difference, trust me!


I am going to share two pie recipes with you, one a bold,dark Guinness Beef and Leek Pie and the other a rustic Apple Pie.

 


Guinness Beef and Leek Pie


Makes 1 BIG pie - serves 8

Ingredients


2 kg beef cubed - goulash is good
2 x 340 Guinness beer
4 sprigs rosemary
½ cup cake flour
salt/pepper
500-750ml beef stock
1 bunch leeks - some white and some green parts
12-15 baby onions - peels removed but keep bottom ends intact, otherwise onions will fall apart when cooked
1 dessert spoon sugar
a splash of balsamic vinegar
salt/pepper
2 tbsp butter

2 rolls puff pastry.
1 egg – beaten


Method

Place the flour, salt and pepper in a plastic and add the beef cubes. Shake the bag until all the cubes are dusted with flour. Heat the oil in a heavy base pot and brown the cubes in batches. This is time consuming, but it adds loads of flavor. Once all the meat is done, add the stout to the pot and add all the beef as well as the rosemary. Place the lid on and cook in oven or on very low heat for 2 hours or until meat is tender. The flour will thicken the sauce so be watchful not to let it burn, top up with stock when needed. Rinse the leeks and chop both white and green parts. Add butter to a pan and saute leeks. Do not allow to cook until soft and mushy, it is not what we want. Keep aside. In the same pan, add some more butter and add the onions, sugar and salt and brown on all sides. Add the vinegar and when the onions are golden brown in color add with the leeks to the beef.
Preheat oven to 180C. Cool the filling while rolling out the puff pastry. Roll out the pastry on a floured surface. Line a 5cm deep pie dish with pastry and fill with the cooled down beef mixture. Brush the edges with egg and top with a pastry lid. Crimp the pastry lid with your fingers and brush with egg wash. Bake for 45 minutes or until pastry is golden brown and all puffed out. Serve with creamy butternut and green beans or steamed Brussel sprouts.

 

 


 

Rustic Apple Tart


serves 6

Ingredients


1½ kg apples - Granny Smith or Pink Lady
100gr butter
1 cup brown sugar
1 sticks cinnamon
1 thumb size piece of ginger - grated
a few pieces of lemon peel
125ml pine nuts

1 roll puff pastry - buy the best you can find
1 egg for egg wash

 

Method


Preheat oven to 200C. Peel and core the apple. Slice in big chunks and keep submerged in cold water to prevent them from turning brown. Heat a heavy based pot on the stove and melt the butter. Add the sugar, cinnamon, lemon peel and ginger and allow to slowly caramelize. Take care not to burn it. Add the apples and allow the apples to also caramelize. You can add a small amount of water to help with the cooking of the apples. You want the apples to be cooked but firm. Transfer the apples to a baking dish, sprinkle the pine nuts over the top and allow to cool while you roll out the pastry. Take some of the egg white and spread ion the edge of the baking dish - it acts as a glue for the pastry lid. Place the pastry over the apples, trim the edges and crimp it with your forefinger and thumb. Paint the egg wash over the top and bake for 35-40 minutes or until the pastry is all puffed out and gold brown. Serve with chilled pouring cream and a steaming mug of coffee!

Interesting people of the West Coast

 

Making a Buzz around the WEST COAST.

 

The big buzz word at the moment on the WEST COAST is BEE.
But not the political one that may first come to mind, but rather the other Bee. BEE Power – that’s what it is all about. And the two very special individuals making it happen in their own patient, gentle way are Denise and Richard Manchip. Living under the radar right here in the quaint little farming village of Darling. Their absolute love and consideration for these ingenious little creatures is very evident in the quiet way they go about moving bee swarms from private homes and public areas. Their recent achievement moving a huge swarm that had made a comfortable but rather large makeshift hive in the corner of “die Stasie” at Evita se Peron. Denise and Richard also hold regular educational talks at the local schools and community centre – teaching the children about Bees, swarm behaviors and the production and harvesting of honey.

Having a Breakdown


Flying along the N7 towards Cape Town from the farm to do a chore that was put off to the last minute, the last thing that you want to feel in your engine is that dreaded shudder. It’s OK, just a bit of dirt, the petrol is quite low. Not to worry I am near the Swartland filling station. I have always enjoyed the fact that my engine is so quiet that even when overtaking the pitch of the engine is that of a contented purr. Silence and the weight of the steering wheel with-out power steering is not something you want to feel or hear on the N7, 60kms out of the city.

This is also not the time to remember you did not charge the mobile last night.


Panic, phone home, why would you have your AA card with you!
AA calls and asks,“ Do you feel safe?” This is difficult to answer as the two guys across the road don’t look heavily armed. As there is no service vehicle in the area I will have to be towed into Cape Town. Where would I like to be towed to. This is another one of those trick questions. I am originally from Gauteng and now live 140kms from Cape Town on the West Coast. My maintenance plan has expired and the problem feels serious.

Phone home, there is an advert on the 567 Cape Talk of a car service company, Auto Works Milnerton, get the number, make contact, get the address. Now I have some where to go, need to just sit and wait for the tow. Sitting millimeters from the tarmac edge of the N7, with death hurtling past you at 120km/ph is not for the feint hearted or me. Got out of the car, it was already dead and stood far enough away for no one to recognize it to be mine, but close enough to jump out at the tow truck.

The vehicle is slid down the back of the tow truck and rushed into the sick bay. Matthew Kempster-Davies the branch manager introduces himself and asks “What seems to be the problem?” Gets in and turns the key.... the purr is there. No problem. Matthew suggest we go for a drive to the filling station to fill up as maybe it is a bit of dirt. Around the corner the shuddering starts again. Petrol gauge shows there is enough fuel to do a least another 120kms. Get back to the Auto works service centre, bonnet up and the search begins. Taking my bank balance into consideration, I mention that the vehicle is due for an oil service (the lights and pinging have been reminding me ) maybe whilst the hood was up? “No problem” says Matthew and off they go. I might point out at this stage that the service area was packed with other vehicles, they were not sitting around waiting for me. This is a busy workshop with all sorts of vehicles including some very expensive looking top of the range ones, making me feel we were in very good company. Into the waiting area I let all concerned know what the situation is. Put a plan B into place in case I need to stay over. At 4.30pm Matthew lets me know all is going smoothly, should be able to do a final check and be ready to go. Not to be, Matthew is not happy and would prefer if he can have the car overnight and do some extra work in the morning. I hear the conversation with my bank manager, it’s not going to be pleasant. Picked up by loyal friend, Nicole and taken to the store to purchase the necessary toiletries for a sleep over and out for supper.

The next morning, in day old attire, off we go to Auto Works. Nicole lives in Big Bay and works in Camps Bay so needless to say we had an early start. There was a light on in the reception of Auto Works at 7.00 am and I was able to get in and and get comfortable for the big wait. Borrowed a book from Nicole. Everything had been checked on the computer, there were men under the car checking that the fuel line had not been compromised in some way. I live as I have said on a farm that has 12 Kms of dirt road to and from the tar section. No the problem was defiantly not there. Back seat is now out, petrol tanks opened to find…………….no petrol. I had a year back paid a fortune to have the sensor replaced. It was there along with the broken one in the tank pushing up against the new one causing a miscommunication to the gauge and a seal was missing. Matthew hopped into his car with a jerry can, had everything sealed up, the vehicle washed and I purred off to do the chore I had left the day before to do.


A lesson for all of us who have run out of motor plan and fear that trip to the garage.

 

Fear no longer get that vehicle to Auto Works, they live up to their promise.

 

To top it all, no call to my bank manager was needed.

The 7th Annual Pink Lunch 2011 

 

 

 



Monda PR, Publicity and Events once again will paint the town pink in aid of Breast Cancer Awareness for Reach for Recovery.

This year The famous Pink Lunch will be created, coordinated and hosted by Monda PR, Publicity and Events at Cape Town’s The Bay Hotel – in The Rotunda where society favorites and generous corporate guests get together to enjoy an amazing day out in “Hot Pink delight!”

Guests, VIP and Major Sponsors will be wearing something “Hot Pink” to mark the memory of those people who have been touch by the illness!

This year Emcee will be new to Cape Town the one and only Miss Lola Lou (Drag queen from Poland) who will welcome, entertain guests and introduced the amazing line up of musicians such as Cape Town’s very own and talented James Stewart, the amazing sounds of the Charles Summerfield band, the fabulous luscious 3 Tons of Fun, the sexy Lu Chase launching her new single called Mercury, new and upcoming stars Leani Ekermans and Lucy Holgate performing a melody of famous Diva’s, to add some grace and energy to the day you will see some amazing Ariel acts by well known artist Dorothy Cole.

To add to the exciting entertainment, a stunning fashion show, showing the beautiful creations in shades of pink by Fedisa School of Artistry.

The day will end with a very exciting auction by Ariella Kuper from Auction Alliance where we will raise those vital funds needed.

The Pink Lunch has for the past six years gone above and beyond to create awareness for Breast Cancer and raise funds for Reach for Recovery and this year will definitely be another pink success! Enough cannot be said for the work that goes into preparing an event like this but the idea that every cent raised would be going to a sister, a mother, a friend who has been touched by the illness has kept staff at Monda PR entirely devoted and motivated to make sure that The Pink Lunch 2011 is an event that would not be forgotten.

The aim of the Reach for Recovery programme is to supply practical and emotional support to breast cancer patients and their families, to enable them to make relevant personal decisions and to find the motivation for recovery with an optimal quality of life. With the help of your support for one day a year you have made a considerable difference in someone’s life!

St. Andrew’s College and The Diocesan School for Girls (DSG) in Grahamstown are unique.
These contiguous schools use a cooperative model which gives all pupils the advantage of shared facilities at each school.
One of these facilities is the DR Wynne Music School, which is situated on the border of the two campuses
and thus easily accessible to all students. A particular feature of our music is the diversity of genres offered
by an equally diverse and competent staff. The relaxed environment is conducive to creativity and
producing music and the Music School has several ensembles such as a Jazz Band, Wind Band, String Ensemble, two Chapel Choirs, Chamber Choir, Rock Band and Marimba Band. We also offer Sound Engineering and composition.
We believe that everyone has the capacity to enjoy music and so prior experience is not a condition of acceptance
to the programme. Some of our notable alumni who received their grounding at the DR Wynne Music School include: Bongani Ndadana, Guy De Villiers (Assistant to the Musical Director: Phantom of the Opera film, involved with Lloyd Webber's Lady in White), Sakile Moleshi (Gold Fish), Simon Bates (Saxophonist), James Bassingthwaight (Producer).

The Music School has healthy ties with the Rhodes University Music Department and is host to the annual Standard Bank Jazz Festival.
