Recipe for February
February, arguably the hottest month of the year!
I grew up in Ceres and man, does it get hot there! As a child however we spent more time in the river and the pools as we did elsewhere so we hardly ever noticed. What I do remember from my care free childhood, is when someone would complain about the heat, my father would always say: “Wag to Februarie, dan sien julle ‘n ding!” I never got to see “ ‘n ding”, but as a grown up, I have to agree, it is hot in February! The other day I caught myself telling my youngest exactly the same thing….wait till February!
My ammunition for complaining children and adults are simple ….. sorbets. Most probably the easiest form of ice-cream to make, it is like eating fresh fruit, just better. As a bonus, for the adults you can add a tipple or two, just what you need to get you through the hottest month of the year.
With strawberries still around, you simply have to try the
Strawberry and Basil sorbet

Ingredients
3 cups strawberries
1/2 cup cold water
1 cup sugar
4T. lemon juice
1 T. vodka
about 1 leaf of basil - you only want a subtle hint of basil!
Put the sugar, water and basil leaf in a pot and heat slowly to melt the sugar. Bring the syrup to a boil and boil for about 3 minutes. Remove the basil and cool the syrup. While the syrup is boiling, puree the strawberries in a blender and strain if you don't want the pips. I like the texture it gives to the end product. Combine the puree with the lemon juice and vodka, then stir in the sugar syrup. You can now transfer this mixture to your ice-cream maker and churn until ready or pour into a plastic container and freeze. Every hour just beat the mixture with a fork to break up the ice crystals. Place back in freezer.
Serve this delicious sorbet as an in-between-courses palate cleanser or as part of a Trio of sorbets....pear, granadilla and some kind of berry sorbet!!!

Straw Bale Gardening
With the need to be more health conscience this year we started to look at extending our, as close to organic herb garden as we can get, to house more vegetables and salad leaves. This would mean new beds. Our soil on the farm around the house in summer is as hard as concrete, when we set about doing the original herb garden we built raised beds and filled the hollows with a mixture of the clay soil, river sand and pig manure from the free range pigs (they sleep in a barn where we have straw on the ground which we rake up every couple of months and dig in to the garden). From the pictures you will see that we put up shade cloth 40% for two reasons one for the harsh afternoon sun and the other protection from the wind. We have chickens that get lay the same egg three times. As we do not spray with any pesticides we do get a few snails and slugs so we let the geese in every now and then and they do the cleaning up for us.

With the temperatures in the 40° for the last couple of weeks the thought of building the beds pushed the idea onto the back burner for the winter. Last week while searching the internet for ideas on organic gardening (images, a throw back from my youth comics were the thing, no TV) I came across Straw bale gardening. A whole new world has opened up.. We will be starting to prepare our bales next week and will keep you informed as to how we are getting on.

CHAIN was born when a group of animal lovers in Tulbagh decided to form an organization to help the animals in the Witzenberg area. By March 2010 CHAIN was registered as a Non Profit Organization (NPO 77158). We are based in Tulbagh but are also working hands-on in the communities of Ceres, Prince Alfred Hamlet, Wolseley and Gouda. Our vision is “To create an environment of animal well-being in the Boland”.
CHAIN provides temporary foster care for rescued and abused animals and then attempts to find suitable homes for them. We have foster homes in Tulbagh and in Prince Alfred Hamlet. At any given time there are between 8 and 15 dogs at each foster home and a similar number of cats (in Hamlet).
Apart from the regular clinics and work in the field treating and rescuing many sick animals, our small group of dedicated volunteers also does fundraising, arranges events, food collections and more. We have monthly spay days at our local veterinary practices in Tulbagh and Ceres to address the over-population problems in our Valley. In addition to this, in partnership with Vetsol, CHAIN has successfully arranged two Mass Sterilizations in the last year. Through these two mass sterilization projects alone, we have sterilized over 150 animals.
CHAIN Goals and Objectives for the future:
Our Mission has 5 areas of focus:
1. We shall manage the animal population through effective programmes of sterilization and necessary euthanasia;
2. We shall establish well managed foster homes;
3. We shall promote education through community involvement;
4. We shall strive to provide affordable veterinary services for the less privileged members of the community;
5. We shall establish effective fundraising programmes to create sustainable financial stability.
CHAIN needs and Wish List:
• Donations of food for the animals in foster care – this is our biggest ongoing need;
• Other practical items such as bowls (food/water), blankets, collars, kennels, transport cages and even toys are always in short supply;
• Our Foster Home in Tulbagh continues to be in desperate need of an upgrade to improve the living conditions of the dogs in foster care. We have the support of a builder to do the work but we require building materials such as cement, roof sheeting, fencing, nails, sand, staples, gates and shade-cloth;
• Monetary donations are VERY welcome and will be used towards running costs such as:
o Our large bill at our local veterinary clinics;
o Allow us to purchase basic and essential medical supplies;
o Cover some of the petrol and air time expenses of our field workers;
o Cover some of the running costs of our Foster Homes;
o Purchase food when necessary;
• Our big dream is to have our own vehicle (bakkie). Without our own dedicated vehicle, our work and ability to help animals in need, is greatly restricted.
CHAIN is totally reliant on donations and volunteers to continue its work. Any funds received enable us to help many more suffering animals!

Sign now! – ban sunbeds
CANSA is urging all South Africans to help them save lives by signing its petition to ban tanning beds, particularly with regards to the use of tanning beds by under 18 year olds. CANSA is aiming to collect 50 000 signatures and to present the petition to the Department of Health in February 2012. The International Agency for Research on Cancer, part of the World Health Organization, includes tanning devices on its list of the most dangerous cancer-causing agents – a list that includes plutonium and cigarettes. Nova Scotia recently became the first province in Canada to make tanning beds illegal for youth under 18 years old. Under the new Tanning Bed Act, tanning salon owners in violation can be fined up to R10 000 and have their business closed for up to two years.
